On food site TasteAtlas's "Best 100 Meat Dishes in Asia," Hanoi's charcoal-grilled pork noodle dish bun cha came in at 28th. Seven dishes from Vietnam made the list altogether, ranging from braised dishes in the south to grilled skewers in the center. This is meant as a map for travelers spending a few days in Hanoi, translating that result into "which restaurant, what to eat."

In VnExpress's August 16 report on TasteAtlas's rankings, Vietnam's highest-ranked entry was bun cha at 28th. The overall top spot went to Indonesia's sate kambing (charcoal-grilled goat or lamb skewers), with the ranking reflecting competition against meat dishes from across Asia. Vietnam's seven dishes span different regions and cooking methods — this isn't the result of a single "national dish" carrying the score.

Charcoal smoke and a cold dipping sauce arriving together — that's the essence of bun cha

Bun cha is made by dunking charcoal-grilled pork meatballs and pork belly into a lukewarm dipping sauce combining sugar, fish sauce, vinegar, and green papaya, then wrapping it with bun (rice vermicelli), lettuce, and herbs from a separate plate.
