② Miến Lươn Đông Thịnh
A specialist eel restaurant running since 1984. It was opened by owner Quách Kim Dung and is now run by her son and daughter-in-law along with 10 staff (VnExpress, August 2024). There are two styles of eel — crispy fried and soft — with fried eel used in soup and mixed glass noodle dishes, and soft eel used in porridge and soup (Vietnamese info site eva.vn, September 2026).

③ Bánh Cuốn Bà Xuân
A shop serving banh cuon, thin steamed rice-flour sheets rolled around a filling. It has run for about 40 years and is now run by family members spanning three generations (Hanoi Food Safety Authority website, April 2026; Vietnamese English-language site VietNamNet, June 2026). The rice for the batter comes from Cao Bang and is ground on a stone mill nearly 100 years old, preparing 15–20kg a day (same website; Vietnamese newspaper Tuổi Trẻ, January 2024).

Inside, old wooden tables sit alongside vintage photos, and the shop’s name references a year significant in Vietnamese history (Michelin Guide listing page). According to the group’s official website, its policy is to preserve old Hanoi flavors, and dishes are served in antique bowls the owners have collected.

A bun cha shop serving charcoal-grilled pork with rice vermicelli. Rather than dipping the noodles in a separate broth, its specialty is putting the noodles, grilled pork, and scallions in a bowl and then ‘pouring’ (chan) bone broth over them (VnExpress, August 2026). It was opened 15 years ago by owner Nguyễn Thị Hồng, who is from Hai Phong (same source).
