On the other hand,Banh mi, which CNN and the BBC list among the world's specialties, did not make a single entry in this year's Bib Gourmand, and surprise has spread among food lovers. The Bib Gourmand featured renowned spots loved by both locals and travelers, such as "Bun Cha Huong Lien," "Bep Mieng," and "Com Tam Ba Ghien." Amid a lineup thorough enough to cover bun bo Hue and hu tieu, only banh mi, a leading representative of street food, slipped through.

The principle of "evaluating the establishment, not the dish"

Michelin stresses that what's evaluated is not the dish itself but the individual establishment. Since selection is based on criteria such as ingredient quality, cooking technique, consistency, and value for the price, banh mi's omission means "there was no establishment meeting the criteria this year"—it doesn't mean the dish's standing has fallen. It also hints at how business models centered on street stalls and takeout are hard to evaluate as establishments.

How travelers should read the list

For travelers from Japan, the Bib Gourmand serves as a practical guide for choosing "an establishment with few misses." For banh mi, it's realistic to search separately through local reviews and specialist communities. You could also see it as: the very specialties not listed by Michelin are the ones hidden in the alley stalls.

Vietnamese food culture recognized for its diversity

This announcement showed that Vietnamese cuisine is being internationally recognized across a wide range, from street stalls to regional specialties. Banh mi's absence is also the flip side of how strict that evaluation is. We'll be watching next year's selection.
