A chef back from training in French cuisine flies the banner of "fun dining"

On Ngo Hue Street in Hanoi's Hai Ba Trung District, a restaurant that shakes up the conventions of Vietnamese cuisine is born. "ZAO – Vietnamese Rooted Eatery" is the latest concept from chef Cuong, who honed his craft at French fine dining establishments in Da Nang, Ho Chi Minh City, and Phu Quoc.

He calls this place not "fine dining" but "fun dining." Striking a balance between refinement and approachability, he reconstructs the ingredients of Vietnam's coast with modern techniques. If it's your first visit, first book a seat at the first-floor kitchen counter. The live feel of the cooking is captured in the dish just as it is.

ZAO's arrival shows that Hanoi's dining scene has begun moving in a direction beyond just "cheap and tasty."
