The Vietnam Record Organization (VietKings) reviewed it and certified it as a Vietnam record for 'the event with the most people cooking and demonstrating to be tasted at once at a single point in time.' The stage was 'Hue, Capital of Cuisine 2026,' hosted by the Hue tourism department, which drew about 48,000 people over four days from July 23 to 26. For travelers planning a trip around Hue's noodles and for anyone in food programming alike, these four days read as a case of 'converting an intangible-heritage designation into a date that moves people.'

What was certified wasn't the number of cooks or the size of the pot

Follow only the headlines and it reads as “more than 30 artisans set a record” or “300 bowls cooked at once,” but that's not what the record VietKings certified is about. The record's name is “the event that cooked and demonstrated bún bò Huế for the most people to taste at the same time at a single moment.” The subject isHow many people could be served at once, and not a contest of how many cooks or how big the vessel. The figure of 300 bowls comes up as the measured number backing that "how many tasted at once."

The day's flow largely agrees across papers. Per VnExpress, participants were more than 30 artisans, cooks, and food experts gathered from the three regions -- north, center, and south. VietKings declared the record after checking submitted documents and conducting an on-site review, and the organizers handed participation certificates to 31 artisans, cooks, and participating groups. Hundreds of residents and travelers gathered at the venue, watching the process and then eating on the spot.

The year two heritages came together: "culinary knowledge" and "noodle craft"

Behind this record being set in July 2026 are two designations that piled up in the preceding year and a half. One is that on June 27, 2025, the Ministry of Culture, Sports and Tourism added “folk knowledge concerning bún bò Huế” to the national intangible cultural heritage list under Decision 2203/QĐ-BVHTTDL. The category is neither architecture nor ritual, butFolk knowledge (tri thức dân gian)—a framework that treats everything from choosing ingredients to prep technique to how it's eaten as knowledge handed down across generations. What was designated wasn't "a bowl made in Hue" but the knowledge that makes that bowl possible.

Another is the noodles themselves. The noodle-making of Van Cu village in Huong Toan commune, Huong Tra, Hue, received a national intangible-heritage certificate on February 19, 2025. In a village said to go back more than 500 years, 125 households and 325 people now make noodles, and many noodle shops in Hue use noodles from here. On the 22nd day of the first lunar month, the 'Ba Bun' festival honors the woman said to have brought noodle-making to the village.

That "Hue, Culinary Capital 2026" narrowed its theme to a single dish and, with the live-scene show "The Legend of Van Cu and the Symphony of Phuong Duc," told the story starting from the village's history was to tie these two together into one narrative. The structure shows not just what's in the bowl but the village where the noodles are born.

48,000 people over four days, with tourism revenue of about 12 billion dong

Item

Details

Source

Dates

July 23–26, 2026 (four days)

Báo Pháp Luật

Venue

Thuong Bac Park (Phu Xuan ward, Hue)

VnExpress

Cooking all at once

300 bowls / over 30 artisans and cooks (31 named on the certificate)

Tiền Phong, VTC News

Number of stalls

About 80 booths, with participants including Hanoi, Hai Phong, Nghe An, Dien Bien, Phu Tho, Quang Tri, Da Nang, Gia Lai and Ho Chi Minh City

Báo Pháp Luật

Visitors

About 48,000 people

Báo Pháp Luật

Tourism revenue

about 12 billion dong (about 74 million yen)

Báo Pháp Luật

Organizer

Hue City Department of Tourism

Tiền Phong

Hue's overall first-half results

Over 4.3 million visitors (up 30% year on year); tourism revenue of 10.3 trillion dong (about 63.6 billion yen, up 56.2%)

Báo Pháp Luật

Second-half 2026 (July-December) target

7.3–7.5 million people, tourism revenue of 20 trillion dong (about 123.5 billion yen)

Báo Pháp Luật

Yen conversions are calculated at ¥1 ≈ 162 dong (late July 2026).

What stands out is the level of about 250,000 dong (around 1,540 yen) per person, dividing revenue by visitor numbers. It's close to what you'd spend buying one dish and a drink at a stall, not a figure that includes lodging or touring. Flip it around and the four-day 12 billion dong is only about 0.06% of the 20 trillion dong tourism-revenue target Hue set for the second half (July–December). The sales themselves are small. What matters is the fact that national papers all wrote about 'bun bo Hue' in the same week.

Government, tourism bureau and artisans: the three phrase it differently

Tran Huu Thuy Giang, vice-chairman of the Hue City People's Committee, explained that the effort would lift the bun bo Hue brand, position it as a flagship cultural and tourism product, and secure its standing on the regional and global culinary map. The officials' language pointed consistently toward 'a position on the map.'

What Tran Thi Hoai Tram, director of the Hue Tourism Department, offered after the close were figures: about 48,000 people visited over four days, with tourism revenue projected at about 12 billion dong. The assessment that "activities went largely without a hitch" is the department's summing-up, and isn't reported as the director's personal remark.

The on-the-ground artisan's view is a bit more granular. Hồ Đắc Thiếu Anh, an artisan of Vietnamese food culture, said the heat of bún bò Huế comes from lemongrass, chili fried in oil, chili sauce, and the fresh chili floated in the accompanying nước mắm, and added, “Every artisan has a secret, and no two bowls are alike,” explaining that this very difference creates the dish's cultural depth. The administration speaks of a uniform brand; the artisans take pride in non-uniformity. That these two stood side by side in the same venue captures the character of this record certification.

What to do after winning the designation — the process the Japan side can take home

Japan's "Washoku; traditional dietary cultures of the Japanese" was inscribed on UNESCO's Intangible Cultural Heritage list on December 4, 2013 (Ministry of Agriculture, Forestry and Fisheries). More than a decade on, recognition as a badge has taken hold. But it's hard to build a path of "I'll go eat it because it's listed." The designation is a credential, not the reason to visit itself.

What Hue did was, the year after the designation,Date, place, peoplewas to prepare. The dates of July 23–26, the place of Thương Bạc Park, and the faces of 31 artisans and groups. The record certification worked as a pretext to pull those three together into a single news story. What Japanese municipalities and food makers tend to get stuck on after obtaining a GI (geographical indication) or various certifications lies in exactly this conversion step. There are support systems up to obtaining certification, but the design that turns certification into “a day to go” has to be built yourself.

Suggestive from a product-development view was how they handled 'no two bowls are alike.' When expanding a brand nationwide, you usually move toward standardizing the taste. Hue did the opposite, lining up 80 booths while keeping each artisan's differences front and center. Rather than one standardized flavor, it puts the very existence of difference at the core of the experience. Sharing only the banner while keeping each shop's flavor also fits the Vietnamese reality of family-run shops that shift their taste with each generational handover (Carrying on an 80-year flavor via TikTok: Saigon's fourth-generation hu tieu shop). When a Japanese planner writes "recreating the authentic taste," the plan changes if you hold the premise that for some dishes, what you'd recreate doesn't settle into a single thing.

Will it broaden into 'area' tourism that includes the noodle village?

There are two ways to read the ripple effects. One is the flow of movement. Van Cu village, at 125 households and 325 people, is not set up as a tourist site. But it has a clear date: the Ba Bun festival on the 22nd day of the first lunar month. If Hue creates an "eating day" in July and holds a "day to see the making" after Lunar New Year, a single bowl's experience stretches into a half-day itinerary.

The other is brand management. This time's 80 booths lined up shops and groups from Hanoi, Hai Phong, Nghe An, Dien Bien, Phu Tho, Quang Tri, Da Nang, Gia Lai, and Ho Chi Minh City. Rather than shutting out “bún bò Huế” made outside Hue, it gathered them from across the country under one banner. Given that the national intangible cultural heritage designation targets not “noodles made in Hue” but “folk knowledge concerning bún bò Huế,” this openness makes sense—knowledge can travel. On the other hand, the homework of how to preserve the necessity of eating it in Hue remains. Pushing Vân Cù village to the fore looks like one answer to that.

Hue tourism itself is growing. First-half 2026 visits topped 4.3 million, up 30% year on year, of which about 1.5 million were international (up 25.1%) and about 2.8 million domestic (up 30.1%). Tourism revenue was 10.3 trillion dong (about 63.6 billion yen), up 56.2% — revenue growth outpacing the rise in numbers. Whether per-head spending keeps climbing will decide whether this kind of food event is worth holding every year.

Practical notes for going to eat bun bo Hue in Hue

Item

Details

What the record is for

"The event that cooked and demonstrated for the most people tasting at one moment" (VietKings certification, July 25, 2026)

Event

“Hue, Capital of Gastronomy 2026,” theme “Bún Bò Huế Day” / ended July 23–26, 2026

Venue

Thuong Bac Park (Phu Xuan ward, Hue)

Organizer

Hue City Department of Tourism

National intangible cultural heritage (cuisine)

"Folk knowledge concerning bun bo Hue" / June 27, 2025, Ministry of Culture, Sports and Tourism Decision 2203/QĐ-BVHTTDL / category: folk knowledge

National intangible cultural heritage (noodles)

Van Cu village's noodle-making craft / certificate awarded February 19, 2025

The noodle village

Van Cu village (Huong Tra, Huong Toan commune, Hue). 125 households, 325 people engaged

Village festival

The 'Ba Bun' festival on the 22nd of the first lunar month

Performance

Live show "The Legend of Van Cu and the Symphony of Phuong Duc"

Timing of the announcement

The 2026 dates appeared in local papers around July 10, about two weeks before the opening

Exchange-rate guide

¥1 ≈ 162 dong (late July 2026)

Whether it will be held at the same scale in 2027 hasn't been announced. Going by this year, there were only about two weeks from when the dates appeared in the local press to the opening. If you're planning a July trip to Hue, the realistic order is to book flights and lodging first and check the dates in the local press just beforehand. Even outside the event period, Hue's noodle shops are open year-round. We've put together in a separate article a walk that covers noodles and rice-flour sweets in a single day (Eat your way across Hue, the city of royal cuisine, for 1,200 yen a day—a journey of noodles and rice-flour sweets). If you're moving as a traveler, place Hue in late next July and check the local papers in early July when the announcements come out. If you're extending to Van Cu village, time it to the Ba Bun festival on the 22nd of the first lunar month. If you're involved in food planning, start by breaking your certification cases into the three points of "date, place, people" and writing out which one is missing. Hue lined up those three the year after its designation and drew 48,000 people over four days.

Sources:VnExpress／Tiền Phong／VTC News／Báo Pháp Luật Việt Nam／VnEconomy／Báo Chính phủ／VnExpress (Vân Cù village)／Báo Pháp Luật Việt Nam (Hue tourism statistics)／Ministry of Agriculture, Forestry and Fisheries

In Hue, more than 30 artisans finished 300 bowls at once, and VietKings certified it as a Vietnam record.
