Arabica prefers cool highlands above 1,000m, but Robusta grows even in lowlands of 300 to 800m. Vietnam's climate and soil conditions were optimal for Robusta.

Production efficiency

Robusta has high resistance to pests and disease, and the amount of beans harvested from a single tree is large, so stable mass production is possible.

Because cultivation costs are kept lower than Arabica, as a result of putting national effort into Robusta cultivation, it became the world's largest Robusta producer.

Vietnam's main coffee-producing areas | Buon Ma Thuot, Da Lat, Son La

Vietnam's coffee-producing areas center on the Central Highlands, and the cultivated varieties and flavors differ by producing area.

Buon Ma Thuot | the center of Robusta production

Buon Ma Thuot in Dak Lak Province is warm and has high rainfall year-round, blessed with fertile volcanic soil. In Vietnam, Robusta is mainly used, and Robusta contains more of the bitter component chlorogenic acid than Arabica.

Furthermore, because dark roast (French roast) is the mainstream in Vietnam, the bitterness is more emphasized.

The reason condensed milk is put in Vietnamese coffee

The custom of using condensed milk was established in the French colonial era. Because Robusta coffee has strong bitterness and is hard to drink as is, the French are said to have drunk it with plenty of fresh milk (cow's milk) added. However, in Vietnam at the time cattle raising was not thriving, and fresh milk was an import and very expensive.

Condensed milk is concentrated, sugar-added cow's milk, and its biggest merits are that it's easy to store even after opening and doesn't spoil easily in a tropical climate. Being superior in cost too, it took root as an indispensable presence in ordinary people's coffee.

Summary

Vietnamese coffee is a coffee culture unique even worldwide, born when the coffee culture brought in during the French colonial era fused with Vietnam's climate and food culture.

As the world's second-largest coffee producer, Vietnam is drawing attention not only for Robusta but also for Da Lat Arabica specialty coffee. Brands such as G7 and Highlands Coffee are perfect as souvenirs, and with a set of a ca phe phin and beans, you can recreate the local flavor at home too.

When you visit Vietnam, do experience various styles of Vietnamese coffee, from back-alley local cafés to refined specialty cafés.

Related articles

For more detailed information on Vietnamese coffee, please also refer to the following articles:

The History of Vietnamese Coffee and the French Influence: A Coffee Culture That Developed Its Own Way
<iframe class="wp-embedded-content" sandbox="allow-scripts" security="restricted" style="position: absolute;
